β-glucans:

Beta-glucans (β-glucans) are a group of naturally present polysaccharides found in the cell walls of bacteria, yeast, fungi, algae and plants such as oats and barley. With such diverse origins, beta-glucans differ in their specific biological properties. All beta-glucans are classified as water-soluble fibre.

Structurally, beta-glucans are short- or long-chain polymers made up of glucose units linked via beta glycosidic bonds. Depending on the bond, isomers are formed. The type of linkage indicates the origin of a given beta-glucan. Fungi beta-glucans have short chains linked via 1.6 bonds while yeast beta-glucans are more extensive, having 1.6 bonds with 1.3 side chains, hence the designation 1.3-1.6.

Vitamin D:
